Alfalfa Sprout Recipe

Alfalfa and Tomato Salad

 Lift a classic tomato salad with Alfalfa.  Serve with sliced mozzarella and char-grilled
bruschetta for an informal starter.

1 pack of Aconbury Alfalfa Sprouts or Alfalfa and Broccoli Sprouts

500g ripe plum tomatoes

20g fresh basil leaves

2 tbsp virgin olive oil

1 tbsp balsamic vinegar

Sea salt and freshly ground black pepper


Roughly chop the tomatoes and tear up the basil.  Combine the oil, vinegar and seasoning, and set aside for an hour for the flavours to blend.  Layer with the alfalfa sprouts, decorating with a few on top.  Drizzle the dressing over the salad and serve.

A member of the mackerel family, tuna is rich in healthy oils and immunity-boosting minerals.
Tuna contains vitamin E and selenium, which are needed for the production of disease-fighting antibodies, and many B vitamins, which enhance energy. Like oily fish, it has high levels of omega-3 fatty acids, a family of essential fatty acids, a family of essential fatty acids that can help prevent heart disease, cancer and depression. Omega-3s also play a role in balancing the immune system, helping to reduce allergic reactions. They are also anti-inflammatory, calming conditions such as rheumatoid arthritis and eczema.
The omega-3s stimulates production of a hormone called leptin that controls the appetite.
Tips: Always choose fresh rather than canned tuna because it loses it's omega-3 fatty acids during the canning process but it is still good diet food - just make sure it has no added oil, salt or other undesirable additives.
The best choices are albacore, skipjack and yellowfin tuna.

Chocolate Energy Pudding

Serves 2-3

1 banana
1/3 cup cacao powder
3-4 tbsp agave nectar
2 tbsp ground flaxseed
3-4 tbsp coconut oil (softened)
1/4 cup water or coconut water

Put everything in a food processor or blender
Store in the refrigerator if you like, but it becomes more solid as the coconut oil hardens. Simply let stand in a warm room for 30 minutes before serving.
